I would like to know if once bankruptcy in started can it be stopped?

Also, what website or books can I find that lists the steps of bankruptcy for the layman.

I would like to consider all of my options. I have lawsuits, maybe future judgements, and maybe future bankruptcy. Since the laws have changed, bankruptcy is not for everyone.

Yes, once bankruptcy is started it can be stopped.  It happens all the time.  However, the hit to your credit is the same as if it were not dismissed. The courts system will still have a record and invariably, this will be picked up by the credit bureaus.   If you've already gone through and filed, it might be wise to keep going.
