Contract by email legally binding?

A contract in whatever form (written, oral, telepathic) is legally binding as long as both parties agree the contract exists.  The question always comes down to how well you trust the other party to acknowledge the contract at all times in the future.  If the answer is anything less than 100%, you would be best served by having a hard copy with an original signature.
